Seafood and aquaculture products face a range of safety challenges, including chemical, biological, and physical contaminants. Chemical risks often stem from pollution, such as heavy metals (e.g., mercury, lead) or industrial runoff, which accumulate in fish and shellfish. Biological hazards include pathogens like bacteria (Vibrio, Salmonella) and viruses, as well as toxins produced by harmful algal blooms, which can cause foodborne illnesses. Biofouling — the accumulation of organisms on surfaces — can introduce unwanted microorganisms, while sewage and waste water from aquaculture or ship traffic further contaminate marine environments. Physical hazards, such as plastic debris or insufficient cleaning practices, also pose risks, compromising both product quality and consumer safety.

Food serves as an essential energy source for living organisms, but it can also act as a carrier of harmful substances or a growth medium for pathogens. While "human food" is defined as fit for consumption, it may unintentionally harbor unwanted microorganisms, heavy metals, or environmental pollutants due to poor hygiene, lack of control mechanisms, or inadequate processing. These risks extend beyond human health, affecting animal and plant species and even introducing invasive species that disrupt native ecosystems. Environmental stress, such as pollution or habitat degradation, further exacerbates these issues, creating a cycle where unsafe food production harms both people and the planet.

Food safety focuses on ensuring that food is free from hazards at the moment of consumption, addressing risks like contamination, inadequate controls, or food fraud. It is distinct from food security, which guarantees access to sufficient and nutritious food. The EU’s food safety policy, for example, regulates every stage from "farm to fork," setting standards for animal health, plant protection, and clear labeling to minimize risks. However, incidents can still occur due to accidents, natural events, or negligence. Contaminants, whether chemical (e.g., pesticides) or biological (e.g., pathogens), remain a critical concern, requiring vigilant monitoring and regulation to protect public health and the environment.
